I rarely ever make potatoes in the crockpot. That's all going to change now as these are my new favorite! For such a simple recipe, these potatoes pack alot of flavor. I did increase the amount of lemon juice than stated in the recipe. I also used bottled lemon juice rather than fresh squeezed.

Thank you for linking to Menu Monday! Your recipe could not have come at a better time for me!!! We harvested our first crop of red potatoes yesterday and I was trying to decide how to use them. I thought of baking them but didn't want to run the oven as it's been very hot here. I've made sweet potatoes in a crockpot and wondered if I could do something similar with red potatoes. As I was thinking about it you went and submitted this recipe to my collection! :-) I am definitely going to try it. Thanks again!
@Stacy that worked out perfctly then! You'll love how easy these are and how cool your kitchen will stay!
Yum! I'm not a big potato fan, but sometimes they hit the spot, and these look delicious!
Oh.My.Word!! I made them for dinner and they were SO good!! My family has requested that we make them often :-) Thank you for sharing!

Hi Patty,
Thank you for commenting on my blog about my Tomato Feta Pasta Salad. I just love this salad the way the recipe reads, but several times I have eaten it as my meal when I add shredded pieces of chicken to it. So, so good! Quick and Easy! I really enjoyed reading your blog. I'll bet the smoothie class you took was so much fun! No matter what time of the day or night, I am always ready for a smoothie, and I love your recipes for them. I'm your newest follower!!
Thanks!
Aren't potatoes so very comforting :) This looks so juicy and delicious.
