Betty Crocker Week

Another Betty Crocker recipe.....Skillet Chicken Parmigiana. When I made the Chicken Slaw Salad the other day my eye caught this recipe while I was on their site. I knew it would be perfect for at least two meals, heck maybe three!

The chicken cooked to a beautiful golden brown.

Finished product over a bed of whole wheat angel hair pasta. Yum!

Skillet Chicken Parmigiana

  • 4 boneless skinless chicken breast halves (about 1-1/4 lb)
  • 1/3 cup Progresso Italian-style dry bread crumbs
  • 1/3 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons olive or vegetable oil
  • 2 cups tomato pasta sauce (any variety) - I used Prego Heart Smart Mushroom
  • 1/2 cup shredded mozzarella cheese (2 oz)


We thought this was absolutely delicious!
