Finished product over a bed of whole wheat angel hair pasta. Yum!
Skillet Chicken Parmigiana
- 4 boneless skinless chicken breast halves (about 1-1/4 lb)
- 1/3 cup Progresso Italian-style dry bread crumbs
- 1/3 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons olive or vegetable oil
- 2 cups tomato pasta sauce (any variety) - I used Prego Heart Smart Mushroom
- 1/2 cup shredded mozzarella cheese (2 oz)
We thought this was absolutely delicious!
