I love cheesecake and I should make it more often. It seems I never use my cheesecake pans. These were super simple since you just use muffin tins.Here's what you'll need:
(adapted from Kraft Foods PHILADELPHIA® No-Bake Mini Cheesecakes)
8 oz pkg cream cheese
1/2 cup sugar
8 oz Cool Whip, thawed
12 chocolate sandwich cookies
sprinkles (optional)
Place cookies on bottom of 12 paper-lined muffin cups.
Beat cream cheese and sugar until well blended.
Gently stir in whipped topping.
