Low-Fat Banana Bread

I had some bananas that were way over ripe and it just so happened that I received a newsletter from one of my local Medical Clinics with this recipe in it. So, I thought what the heck, I'll try it.

Low-Fat Banana Bread

What a beauty!

Low-Fat Banana Bread

  • 4 egg whites
  • 2/3 cup white sugar
  • 2 bananas, very ripe and mashed
  • 1/4 cup unsweetened applesauce
  • 1/3 cup skim milk
  • 1 T. vegetable oil
  • 3/4 tsp vanilla
  • 1-3/4 cup flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup walnuts, chopped (optional)

Preheat oven to 325 degrees. Spray a full-size bread pan with cooking spray and dust with flour.

In a large bowl, beat egg whites and sugar until fluffy. Beat in bananas, applesauce, milk, oil and vanilla. Sift flour, baking powder, soda and salt. Stir flour mixture into banana mixture. Fold in nuts. Pour batter into prepared pan. Don't fill more than 1/2 to 3/4 full.



Bake until golden brown and a toothpick inserted in the middle comes out clean - about 1 hour.

Wow! This would be great to make, the stats are perfect! What's the serving size/how many slices per loaf?

Sorry Vicky...I thought I listed the servings per loaf. It's 10.
