We always eat the same pizza. It doesn't seem to bother my husband, but I like to try something different. I came across this recipe in an old circular I had picked up while in another town. I love paging through the magazines that you find on the stands when you enter a restaurant. You never know what you will find!
I didn't really make any changes to this recipe. I used Romano cheese instead of asiago, even though asiago is one of my favorites. I loved the flavor this pizza had. I think next time I make this I will back off on the Parmesan though. I like Parmesan cheese, but the amount the recipe calls for seemed to be a little overpowering to me.
The recipe made alot! We had pizza for two nights.
French Bread Pizza
1/4 cup butter, softened
2 tablespoons olive oil
3/4 cup grated asiago or Romano cheese
2 tablespoons minced garlic
1 teaspoon dried basil
1/4 cup finely diced red bell peppers
1/2 teaspoon black pepper
1 (16 ounce) loaf French bread
2 cups shredded rotisserie chicken
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
Preheat oven to 400° degrees.
In a small bowl, stir together the first seven ingredients. Slice French bread in half lengthwise. Cut each half crosswise into three pieces. Spread butter mixture over the French bread slices. Top with rotisserie chicken. Sprinkle mozzarella and Parmesan cheeses over chicken. Bake 8 to 12 minutes until cheese is melted and golden brown.
