Scallop Pesto Pasta

Scallop Pesto Pasta
We loved this dish! The only thing I did different was to add a garlic blend seasoning and some paprika to the scallops while cooking. I also used a multi grain pasta. This is something that I will definitely make again. Of course I made enough pasta for a small army, so I know what I'll be incorporating into my next meal! I never manage to cook just the right amount of pasta.

Scallop Pesto Pasta

8 ounces uncooked angel hair pasta
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 pound sea scallops
3 tablespoons butter
1/2 cup prepared pesto

Cook pasta according to package directions. Meanwhile, in a large resealable plastic bag, combine the flour, salt and pepper; add scallops in butter for 2-1/2  to 3 minutes on each side or until opaque. Drain pasta; toss with pesto. Top with scallops. Yield: 4 servings.
