Microwave Potato Chips
As I was perusing Pinterest the other day, I came across a photo of potato chips. What caught my eye was the title...microwave potato chips! Of course I had to click on the link to take me directly to the blog, Food Gal. I then made a mental note to try out the recipe. I pinned the photo to my "Food Love" board so I wouldn't forget. I think mine look pretty darn good, but Carolyn's look even better! I used a mandolin to slice the potatoes. I think next time I will slice them thinner.

This is what I did based on her recipe. I sliced about three small red potatoes, after scrubbing and drying them. I just left them on my cutting mat and drizzled Roasted Onion and Cilantro EVOO over them. Then I sprinkled sea salt over all. I took my hands and thoroughly mixed them up.

I sprayed a microwave safe plate with Pam and then spread a layer of potato slices. You have to play around with the amount of time you cook them. What worked best for me was three minutes, turn the potatoes over and then cook for two minutes. It will depend on the thickness and your microwave. As you can see from the photo below, my first batch doesn't look so good, LOL!

However, even though they looked burnt they had great crunch and taste!

I like that I can try different olive oils and I can control what goes into them. Also if I just want a few chips I can whip them up in no time flat!

I am so glad you loved them as much as I did. They really spoil you for any other chips, don't they? I mean, no other bagged potato chip has such fresh potato flavor. Mmm, definitely can't eat just one. ;)
