If you're looking for something quick and easy without alot of ingredients, then this casserole is for you.
I found this in a Campbell's cookbook called "M'm! M'm! Homemade In Minutes". The reason this recipe caught my eye is because I have been going through boxes of books in order to donate some of them. We're getting ready to move, and my husband and I are trying to clear out excess! I feel like a kid at Christmas! Every time I open a box I find a book that I've completely forgotten. I'm not donating as many as my hubby thinks I should. He practically has to pry them from my hands!
I used the lowest sodium soups I could find and the leanest beef. I think I'll substitute ground turkey next time.
Spicy Salsa Mac & Beef
1 pound ground beef
1 (10-1/2 oz) can condensed beef broth
1-2/3 cups water
2 cups uncooked medium shell or elbow macaroni
1 (10-3/4 oz) can condensed cheddar cheese soup
1 cup thick and chunky salsa
In medium skillet over medium-high heat, cook beef until browned, stirring to separate meat. Pour off fat.
Add broth and water. Heat to a boil. Stir in macaroni. Reduce heat to medium. Cook 10minutes or until macaroni is done, stirring often.
Stir in soup and salsa and heat through. Serves 4.
