I've always wanted to make homemade salsa and tortilla chips and today was the day I experimented. The results aren't bad. I think the next time I will use corn tortilla's instead of flour for the chips and I will add more jalapeno pepper in the salsa. I might also use one more lime.
For the salsa I chopped and combined:
1-1/2 cups tomatoes
1 cup red onion
1 Tbsp jalapeno pepper
2 Tbsp cilantro
1/2 cup each of red and green pepper
Then I mixed in the juice of one lime and a pinch of salt. Let sit in refrigerator for a few hours to combine the flavors.
For the chips I just cut 8-inch tortilla's into 8 pieces each with a pizza cutter. I then sprayed them with non-stick cooking spray and put them on a pizza pan spritzed with cooking spray and baked at 400 for 5 minutes, turning chips over once and cooking for another 3 to 4 minutes.
