Something Sweet...

I finally made something sweet as a belated birthday gift to myself. I figured I deserved it, since I didn't have cake. Pictured below is what I made and it's called Rocky Road Candy. These are very rich and very delicious! Unfortunately nothing is ever too sweet for me. I did have a couple pieces after dinner tonight, but I do realize however that it's not safe for me to have this around since I'm the only one that will eat it. So knowing that, I packed some up for Steve to take to work tomorrow. I did get three walks in today, but if I were to eat the whole pan of these I'm sure it would be enough calories and fat for probably a month or more. I'll post the recipe below, if anyone is interested.

Rocky Road Candy


Rocky Road Candy


2 cups (12 ounces) semi-sweet chocolate chips


2 tablespoons butter or margarine


1 (14-ounce) can sweetened condensed milk (not evaporated milk)


2 cups dry roasted peanuts


1 (10-1/2 ounce) bag miniature marshmallows



In a heavy saucepan, over low heat, melt chocolate chips and butter with the sweetened condensed milk; remove from heat.

In a large bowl, combine peanuts and marshmallows; stir in chocolate mixture. Spread mixture in a waxed-paper lined 13 x 9-inch pan. Chill 2 hours or until firm.


Remove from pan; peel off paper and cut into squares. Store loosely covered at room temperature.


Microwave directions: Combine chocolate chips, butter and sweetened condensed milk in glass bowl. Cook on high 3 minutes, stirring after 1-1/2 minutes. Stir to melt chips. Let stand 5 minutes. Proceed as above.

Makes 3-1/2 dozen pieces.
