I've seen recipes like this using a variety of different boxed cake mixes and just a can of diet cola. I've always wanted to try making cupcakes using this method.
I picked up my ingredients last week, but only got around to making these cupcakes this past weekend. Of course I neglected to buy diet 7-UP! I never drink pop and if I do I never drink diet. I've never been able to develop a taste for it. Yes, I still call it pop instead of soda. I grew up calling it that and I guess you can't teach an old dog new tricks!
Two Ingredient Strawberry Cupcakes
(adapted from Lady With The Red Rocker)
1 box strawberry cake mix
12 oz diet 7-UP (or regular)
Combine the cake mix and the 7-UP in bowl. Beat with an electric mixer until well blended. I baked it at 325° like she suggested. They were done when a cake tester came out clean. I also frosted them with light Cool Whip.
