I found this recipe over at Finding Joy in My Kitchen. I made it this evening and the hubby and I both thought it was excellent! When I first saw the recipe I thought it was similiar to a pasta salad I buy at the deli of a local supermarket. After reading it, I realized that it's quite different.
I followed the recipe pretty closely with the exception of not adding salt and pepper, and we didn't even notice. I cooked two boneless chicken breasts and then diced them up. I used 8 oz of whole wheat penne pasta and 2 cups of spinach. Next time, I think I'll add more of the spinach and maybe some pine or pignoli nuts. I came up with about 10 - 1 cup servings.

If by chance you are following Weight Watchers, I figured this came out to 3 points per cup.
