I made a super easy pizza last night. It was also delicious! I had planned to make it this weekend, but since what I going to make wasn't thawed I had to improvise.
When I say easy, I mean it. As I was wandering down an aisle in the grocery store my eye caught a Boboli pizza crust. I picked up a box of Boboli Original Pizza Sauce and found the recipe for this on the back of the box. I used the 12" Thin Pizza Crust. For the chicken I bought a 16-oz. package of thinly sliced chicken breast. I didn't have an orange pepper so I just used a green one.
Chicken Fajita Pizza
1 pouch Boboli Original Pizza Sauce
1 12" Boboli Original Pizza Crust
1 boneless, skinless chicken breast
1/2 small red onion, thinly sliced
1/4 cup each red, yellow and orange bell pepper, diced
1 cup shredded Colby Jack cheese
1 tsp dried cumin
Preheat the oven to 450°. Cut the chicken breast into bite-sized pieces and sprinkle with cumin and salt and pepper to taste. Heat a skillet to medium and add 1 Tbsp vegetable oil. Saute peppers and onions until tender, about 2 minutes. Remove the vegetables and add the chicken breast pieces. Saute until light brown and cooked through, about 5 minutes. Spread pizza sauce on crust and top with chicken, vegetables and cheese. Bake on ungreased cookie sheet 10 minutes or until crust is crisp and cheese is melted. Enjoy!
On another completely different subject, normally I participate in the Moms Crazy Cooking Challenge each month on the 7th. We thought it was ending after last month.....but it's back!
