This is my favorite chocolate cake and frosting recipe. The cake is very moist and the frosting is so creamy. In my opinion...it's the best! I thought I had misplaced the recipe. When I came across it, I made sure to put it in a safe place.
My plan was to make these for my birthday....two weeks ago! Life got in the way and I never got around to it. I finally had time to get them made and they were worth the wait! If I could just get my husband to have one.....
Chocolate Cake With Peanut Butter Frosting
Cake
2 cups flour
2 cups sugar
2/3 cups cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 cup milk
2/3 cup oil
1 teaspoon vanilla
1 cup brewed coffee at room temperature
Peanut Butter Frosting
3 ounces cream cheese, softened
1/4 cup peanut butter
2 tablespoons milk
1/2 teaspoon vanilla
2 cups powdered sugar
Combine dry ingredients. Add eggs, milk, oil and vanilla; beat for 2 minutes. Stir in coffee (batter will be thin). Pour into greased 9x13 inch pan. Bake at 350° for 35-40 minutes. Cool completely. For frosting, beat the cream cheese and peanut butter in a mixing bowl until smooth. Beat in sugar, milk and vanilla. Spread over cake. Sprinkle with miniature chocolate chips if desired. Store in refrigerator.
