Crab-Pasta Salad

This must be cold salad week. It's so hot and humid I've been grilling enough meat for a few days at a time and then filling in with cold salads. I found this one over at the Better Recipes site.

I know it seems like forever since I've posted a card or layout, but I still don't have my craft room in order yet. At least not enough to be crafting. Too many other things to do and too many interruptions. Hopefully soon! We do have to eat though, so blogging about food is better than nothing!

Enjoy!

Crab-Pasta Salad

Crab-Pasta Salad
makes 6 servings

•1 small package crab meat, chopped
•1 16-oz package elbow macaroni pasta, cooked, rinsed and drained
•1/2 cup shredded carrots
•1/2 cup frozen peas or chopped fresh broccoli
•1/2 cup sour cream
•1 cup mayonnaise
•Salt, pepper and garlic powder to taste
•Lemon zest, optional

Mix all ingredients well; cover and refrigerate at least 1 hour before serving.

I made a few modifications: I used light sour cream and mayonnaise and Mrs. Dash Garlic & Herb in place of the salt, pepper and garlic powder. I also chose to use broccoli instead of peas.

My husband loved this salad! I thought it was pretty good too!
